Black Bean Salsa

1 (15oz) can black beans, rinsed and drained
6 Roma tomatoes, chopped
4 green onions, sliced
1 clove garlic, minced
3 TBS fresh chopped cilantro, or 3 tsp dried
2 1/2 TBSP olive oil
2 TBSP fresh lime juice
1/2 tsp cumin
1/4 tsp salt
¼ tsp black pepper
1 jalapeno (finely diced) – optional

Combine all ingredients, may eat right away or refrigerate for a stronger flavor 4-8 hours and then enjoy. Serve with tortilla chips. Yield 4 cups
