Breakfast Burrito

Serves 1

INGREDIENTS

1 egg
bit of oil
1-2 TBSP salsa*
1 corn tortilla**
Sea salt & pepper
Any other burrito ingredients you enjoy: avocado, corn, beans, cheese, etc. (optional)

DIRECTIONS

Scramble or fry the egg in oil (or fat of your choice) until cooked through. Season, to taste, with sea salt and pepper. (We prefer the texture of scrambled eggs, but the fried egg is easier to eat because it doesn't fall out of the tortilla!)

Warm the tortilla - we just lay the tortilla in the pan on top of the fully-cooked eggs and cover for a few minutes until it's warm and soft.

Wrap egg, salsa and any other ingredients in the tortilla, and enjoy!

*Use homemade salsa or a commercial variety that contains no additives. (We use "Kirkland Organic" brand from Costco.)

**You can make homemade tortillas, but we just use organic commercial brands that contain just corn, water and lime. (In Omaha, we find these at Whole Foods and Trader Joe's.)
