Carrot & Cauliflower Soup

Serves 4-6

INGREDIENTS:
1 head cauliflower, cut into florets
3 medium carrots, chopped
4 cups water
2 cloves garlic, chopped
1 stalk celery, chopped
1 medium onion, chopped
1 TBSP sea salt

DIRECTIONS:
1. Combine all veggies into pan with water and bring to a boil. Reduce heat and simmer until veggies are tender.

2. Remove from heat, and blend until smooth. A hand blender (or stick blender) works great, but you can transfer the soup to your regular blender, too!

3. Stir in the salt, and enjoy!
