Carrot-Almond-Raisin Salad

Serves 6

INGREDIENTS:

2 (10 oz.) bags shredded carrots
3/4 cup slivered almonds (or dry-roasted, unsalted peanuts)
3/4 cup raisins
3 TBSP minced fresh parsley
2 TBSP minced fresh mint

Dressing Ingredients
1/4 cup extra virgin olive oil
2 TBSP fresh lemon juice
1 1/2 tsp raw honey
1/4 tsp sea salt

DIRECTIONS:

Stir together dressing ingredients in a small bowl, and set aside.

Combine all other ingredients in a medium bowl.

Toss dressing with carrot mixture.

Wait at least 20 minutes before serving so all the flavors can incorporate.

Cover and refrigerate any leftovers, and enjoy as a side dish or a quick lunch the next few days! It stays nice and crunchy! YUM!
