Cinnamon Roll Cookies (Grain-Free)

I named these "Cinnamon Roll" Cookies because they made my house smell like cinnamon rolls were baking in the oven! And, these are the closest thing to having a cinnamon roll that I've tasted in years! Yummy! These cookies are chewy and not overly sweet, and the recipe below is based on this recipe from TheNourishingHome.com

Makes ~ 15 small cookies

INGREDIENTS:

2 cups of walnuts
10 Medjool dates, pitted
2 tsp ground cinnamon
Pinch of sea salt
1 TBSP coconut oil, melted
1 TBSP pure vanilla extract

DIRECTIONS:

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Place walnuts and dates in food processor and pulse until coarsely ground.

Add cinnamon, salt, oil and vanilla; and pulse until well-combined and dough starts to stick together.

Form dough into 15 balls with your hands, using a Tablespoon measuring spoon for sizing.

Flatten each ball with your hands to form a cookie shape, and place onto cookie sheet.

If you'd prefer the "ridged" look shown here, then VERY gently press the back of a fork into each cookie in both directions. Don't press hard at all or your fork will stick to the dough.

Bake 8-10 minutes, until the dough looks a bit dry and lighter in color. Set baking sheet onto a cooling rack and allow cookies to cool completely. We also enjoy these refrigerated for an even chewier texture!

Carie - I hear ya on the junk foodie. lol. I have to practice moderation as well. THESE are sure worth spending your once/twice per week allotment on!

I think we will be making a grocery run this weekend! These sound wonderful. I only allow sweets once or twice a week because I am 100lb junk foodie, if I allowed myself.

Oh...I didn't really look through it. I was just looking for a photo for you and that's the first site that popped up ;)

They do vary in size a bit when you buy them, so it looks like they just separate out the ones into "slightly larger" and "slightly smaller" and call them "jumbo" and "large". ??

Christy I will call around to see what store close to me carries these, are you using 10 large or jumbo size dates?

Sometimes the dates are sold already "pitted." If so, it will be labeled as such, and you won't need to remove the pit :)

Michelle - You use the whole thing...except for the seed/pit in the middle - which you can remove by cutting the date in half. Dates are a dried fruit that look like a ginormous raisin ;)  We prefer the Medjool variety - available in Omaha in the bulk bins at Whole Foods or the produce section in the cooler along the east wall. Also available in the cooler along the South wall in the produce section at Trader Joe's and also in the (non-refrigerated) produce section at Costco. Surely Jane's Market in Benson and No Name Nutrition sell them, too!  http://www.medjooldates.com/
