Cinnamon Roll Cookies (Grain-Free)

I named these "Cinnamon Roll" Cookies because they made my house smell like cinnamon rolls were baking in the oven! And, these are the closest thing to having a cinnamon roll that I've tasted in years! Yummy! These cookies are chewy and not overly sweet, and the recipe below is based on this recipe from TheNourishingHome.com

Makes ~ 15 small cookies

INGREDIENTS:

2 cups of walnuts
10 Medjool dates, pitted
2 tsp ground cinnamon
Pinch of sea salt
1 TBSP coconut oil, melted
1 TBSP pure vanilla extract

DIRECTIONS:

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Place walnuts and dates in food processor and pulse until coarsely ground.

Add cinnamon, salt, oil and vanilla; and pulse until well-combined and dough starts to stick together.

Form dough into 15 balls with your hands, using a Tablespoon measuring spoon for sizing.

Flatten each ball with your hands to form a cookie shape, and place onto cookie sheet.

If you'd prefer the "ridged" look shown here, then VERY gently press the back of a fork into each cookie in both directions. Don't press hard at all or your fork will stick to the dough.

Bake 8-10 minutes, until the dough looks a bit dry and lighter in color. Set baking sheet onto a cooling rack and allow cookies to cool completely. We also enjoy these refrigerated for an even chewier texture!

Christy what are medjool dates? And where do you find them? Are they like figs and you scoop the inside out?
