Vegetable and Black Bean Soup (vegetarian!)

Serves 4-6

1 TBSP oil
1 onion, chopped
2 cloves garlic, minced
1 jalapeno, seeded and minced
1 TBSP chili powder
1 tsp cumin
2 cups frozen corn
2 tomatoes, diced
2 15-oz cans black beans
4 cups vegetable broth
Salt and pepper, to taste

Heat oil in pan.

Sauté onion, pepper and garlic for about 5 minutes, until tender.

Add remaining ingredients and bring to a boil.

Simmer until ready to eat!
