Makes 4 pancakes

1 cup almond meal
3 large eggs
1/8 tsp vanilla extract
1/8 tsp ground cinnamon
Mix above ingredients together in a medium mixing bowl. Heat a skillet over medium-high to high heat. Melt butter or coconut oil in the pan (we use 1 tsp oil for a large skillet).
Pour the batter 1/4 cup at a time into the skillet. Cook until both sides are golden brown. Top with raw honey; enjoy!
