"Inside-Out" Tacos (Dairy-Free/Gluten-Free/Vegan)

"Inside-Out" Tacos (Dairy-Free/Gluten-Free/Vegan)

Serves ~ 4

1 can organic pinto beans, rinsed
1 can organic black beans, rinsed
1 ½ cups frozen corn
2 tsp chili powder
1 ½ tsp paprika
1 ½ tsp ground cumin
1 tsp onion granules
3 ¼ tsp garlic granules
½ tsp sea salt
¾ cup water

Mix together in a saucepan. Bring to boil. Then simmer on Low about 15 minutes

1 bag 365 organic brand corn tortillas (Whole Foods)
Sea salt, to taste

Sprinkle with sea salt and bake in single layer on a cookie sheet for 8 minutes at 350 degrees. Leave chips in oven, but shut it off and crack the door – for about 10 additional minutes, so the chips “dry” completely.

2 medium avocados
2 Roma tomatoes, diced
6 small green onions, diced
1 small bunch cilantro, chopped
Juice of 2 limes, to taste
1 tsp garlic granules, to taste
1 tsp sea salt, to taste
2/3 cup organic store-bought salsa, check ingredients CAREFULLY!! (optional) - We use Kirkland Organic brand from Costco

Mash avocados in a medium bowl. Stir in all other ingredients.

2 Roma tomatoes, diced
2 small green onions, diced

1. Spread guacamole on each tortilla.
2. Top with bean/corn topping.
3. Sprinkle with tomato and green onion.
