Skillet Fries

Serves 4 (or 2 tater lovers!)

INGREDIENTS:
1 1/2 lbs potatoes (we prefer Yukon Gold or any thin-skinned potato - freshly grown is best!); diced

3-4 TBSP coconut oil

Sea salt, to taste

DIRECTIONS
1. Heat oil in a large skillet over medium-high heat.

2. Stir in potatoes to coat, and cover with lid. Cook for about 10-12 minutes, stirring occasionaly, until tender.

3. Remove lid and continue coooking until taters are browned and a bit crispy.

4. Sprinkle with sea salt, to taste.

5. Transfer to a papertowel-lined plate to drain extra oil, if necessary.
