Makes 12 cookies
3/4 cup oat flour* (just grind some oats in a blender)
3/4 cup quick oats*
1/2 cup cane sugar
1/8 tsp sea salt
½ tsp cinnamon
1/3 cup grapeseed oil (or softened butter if you can have dairy)
1 tsp pure vanilla extract
Preheat oven to 350 degrees, and line a cookie sheet with parchment paper.
Mix dry ingredients together in one bowl, and mix wet ingredients together in a separate bowl.
Then mix all ingredients together.
Drop by rounded tablespoon onto parchment paper. Bake 10-14 minutes, until edges are brown and tops have darkened.
Cool for a few minutes before removing from baking sheet. These are great warm or cooled!
*Be sure to use oats that are certified “gluten-free” if you are gluten intolerant.
