Quick Cabbage & Carrots

Serves 4 (although the 2 of us usually eat it all!)


2 TBSP extra virgin olive oil (or more if needed)

Couple handfuls of thinly sliced green cabbage

1 small onion, thinly sliced

1 medium carrot, sliced into “ribbons” using a veggie peeler

Sea salt & freshly ground black pepper, to taste


Heat oil in a large skillet over high heat.

Add all the veggies, and sauté until tender (about 10 minutes) – adding more oil if needed.

Season, to taste, with salt and pepper. Serve.
