Savory Flat Bread (gluten-free)

1 1/2 cups almond flour (finely ground almonds)
1/2 cup finely ground walnuts, or pecans
1/2 tsp each onion & garlic powder
1 tsp dried parsley
1/2 tsp sea salt
1/2 tsp dried thyme
1 large egg
1 Tbsp oil (olive, grape seed, etc)

In mixing bowl, combine dry ingredients. Add egg and oil and stir to form stiff dough. With your hands, roll balls of dough the size of walnuts. Place balls onto parchment paper on sheet pan, and space them about 4 inches apart. Cover balls with parchment paper, and with an unopened food can, press very firmly to flatten each ball. Remove parchment paper, and bake for 10-12 minutes at 350 degrees. Makes 12-14 bread rounds.

This was first attempt at flat bread.  I am too cheap to buy it in the store and this recipe gave instant success.  This would be great at a dinner part or to bring to a restaurant when other are eating bread and butter.  I didn't have dried parsley but used 4 dried sage leaves.  It really really delicious.  I think I need a whole plate of sauteed vegetables or I would eat them all.  The off thing is it was very smoke in my convection oven.  I don't know why.  The final product did not taste smokey at all.
