Spinach and Black Bean Wraps

Spinach and Black Bean Wraps

Ingredients:
2 cups frozen corn
1 can (15oz) black beans, rinsed and drained
10oz frozen spinach
1 cup shredded cheddar cheese (optional)
1 can (4oz) can chopped green chiles
4 green onions

1 tsp ground cumin
1/2tsp chili powder
1/2tsp black pepper

15 tortillas (I use costco brand, not cooked and only 5 ingredients)

Directions:

1. In large bowl, mix the first 9 ingredients. Spoon the mixture onto the tortillas and wrap them up.

2. Place seam side down on a baking sheet and bake at 425 degrees for about 12-15mins. or until lightly browned.

Serve with salsa.

We just try to reduce gluten (and most grains, really) in our diet these days...

Are you doing the whole gluten free products , is that why your not eating torillas...

The tortillas she's referring to are Tortilla Land brand tortillas from Costco (in Omaha, NE). They are uncooked and contain: "wheat flour, canola oil, salt, sugar and water."  I don't know of any regular white tortillas that are sugar free. There are recipes online for making your own though, and it seems pretty simple. We've used Ezekiel brand sprouted whole grain tortillas in the past (they don't contain sugar, and are found in freezer section of health stores, etc.)...but now we don't really eat any tortilla items so I haven't looked around at the stores for quite a while to see what options are out there.....

You said the torillas have 5 ingr. are those 5 ingr. preservative (additive free)?

Excuse my awesome picture!! LOL! These are very yummy! Kids love them and they are great to freeze and use later when you don't have time to cook! Very easy :)
