The Everything Morning Muffin

Mix in large bowl:
1 cup whole wheat flour
1 cup quick oats
1 cup each chopped almonds and walnuts
3/4 tsp salt
1/2 cup dried, unsweetened coconut
1 tsp cinnamon
1 cup raisins
1 1/2 tsp baking soda
1 T baking powder

In food processor, rough-chop:
2-3 apples, peeled and cored
1-2 carrots
Add & pulse a few times:
1/3 cup oil (grapeseed or coconut oil)
1/4 to 1/2 cup honey
2 tsp vanilla extract
3 eggs
Mix everything together. Do not over-mix. Spoon into muffin cups, or oiled muffin tin. Bake at 350 degrees for 20-25 minutes. Cool. Makes about 12 muffins.
