VEGAN Shepherd's Pie

My WINTER WEATHER CHASER
Shepherd's Pie

1 cup peas frozen
1 cup corn frozen
3 med carrots sliced
3 stalks celery sliced
4 large potatoes peeled and cut
2/3 cups ranch dressing
almond milk and sea salt as needed
1 cup onion
2 tbs olive oil
3 tbs soy sauce (liquid aminos)
2 cups diced tomato
1 pkg beyond meat (or prepared lentils)
add water and thicken gravy as you choose

1. boil peas, corn, carrots and celery until tender.
2 boil potatoes until tender, drain and add "bobbi's ranch dressing" along with almond milk and sea salt. Mash to make creamy ranch mashed potatoes
3. place onions in skillet with olive oil and saute. when glazed and golden add soy sauce 3tbs, tomatoes and beyond beef. let this cook until beyond beef is thawed and it has a rich saucy taste.... then thicken as you desire.
4. layer veggies, beefy sauce and mashed potatoes. Bake in the oven if needed until warmed all the way through.
