Gluten Free Baking Tips

The main obstacle to overcome while baking without gluten is getting the recipe to stay moist after it has cooled from being baked. It is the nature of gluten to cling to moisture. Where there is no gluten, the moisture will evaporate. Here are some things to try use less water and bind it with freshly ground chia seed.
