Makes about 4 servings

INGREDIENTS:

Dressing ingredients:
1/2 cup homemade mayonnaise (or the "cleanest" store-bought version you can find, like Spectrum brand)
1 1/2 TBSP lemon juice
1 TBSP apple cider vinegar
2 TBSP sugar
1/4 tsp ground pepper
1/2 tsp salt

Salad ingredients:
14 oz. bag of store-bought coleslaw mix (red cabbage, green cabbage & carrots)
1 medium red apple, diced (we prefer Fuji apples)
1 small bunch cilantro, chopped
1/4 cup diced red onion


DIRECTIONS:

1. In a medium mixing bowl, whisk together the dressing ingredients until smooth.

2. Add all of the salad ingredients, and stir to combine.

3. Serve immediately or cover and refrigerate for later.
