Sweet and refreshing topping for a bed of baby spinach (or your favorite greens).
1 mango, pitted, peeled and chopped
Small bunch of mint, chopped
Small bunch of cilantro, chopped
Juice of 1 lime
1 red onion, chopped
1 chili, seeded and finely chopped (optional)
3 tomatoes, diced
Salt and ground black pepper, to taste (optional - - I didn’t find this necessary)
Makes enough to top about 6 meal-sized salads. Also yummy to add slices of cooked steak or other meat if you prefer. Note: This is the consistency of SALSA, not dressing; but it’s a delicious replacement for salad dressing. It keeps well in the fridge for a few days, also, so your “hard work” will pay off for days to come!!
Alternate recipe: chop the tomatoes in large, bite-sized chunks. Add 3 cucumbers, chopped into large, bite-sized chunks and stir in the remaining ingredients. Enjoy as a cucumber-tomato salad!
