Serves 4

INGREDIENTS:
2 large yams, peeled and cut into 1-inch chunks
2 TBSP olive oil
2 TBSP pure maple syrup
2 tsp cinnamon
2 tsp dried thyme
sea salt, to taste

DIRECTIONS:

Preheat oven to 400 degrees, and grease a casserole pan.

Toss all ingredients together in the pan.

Bake uncovered for 30-35 minutes,stirring at least once. Bake until tender and browned.

Season with salt, to taste.
