I am slowly getting around to making everything we eat myself. This journey started as a way to lose weight, but has quickly turned into a search for healthy, non-processed, yummy meals. And we are losing weight! Our aches and pains have gone away and we feel better all around.

Wheat Grass

Does anyone grow their own Wheat Grass? Just wondering about this sprouting business and how beneficial it is. If anyone has any experience with it, please share. Either with wheat grass or sprouts for eating or dehydrating/grinding into flour, etc. Thanks!

Time Management and Cooking Real Foods

I am looking for ideas on how to manage the meal preparation when not using any processed food. We have almost eliminated processed foods - down to just a few condiments. But it seems that dinner takes much longer to prepare these days. While I love to cook and enjoy making everything from scratch, I am wondering what other busy moms and at home chefs do to make this task go a little faster. I would love to hear from anyone who has successfully figured this out. Thanks for posting!

We live northwest of Tekamah. We're in the bluffs and are well, but we've moved several people and it's a mess. The river bottom area will never be the same again. Hope to see you at market.

The only thing I do when making grade jelly is to run the juice with the skins through a folly food meal (hand operated). This gets lots of the skins ground down to where there is very little pulp left. The leftover pulp goes to the chickens, sorry at least I have no idea of how to use just the skins :) I also do the same with my apple butter...wash, and core the apples leaving the skins on, cook on low in a crockpot, put through the food mill, then add whatever ingredients your family likes...I use cinnamon, nutmeg, brown sugar, etc. You have very little pulp left when done, don't have to peel the apples, and don't have to stand over a constantly stir. Sorry I could not be of more help with the grapes. Happy Canning. Hope you are high and dry this year.

The trick with bananas is not to use over-ripe or under-ripe ones, use a stainless steel blade to cut them with. I do not dip them in lemon water like most books tell you to do, they get slimy to work with and "gross" me. I then flip the banana chips about 1/2 way through the drying process. You can dehydrate cooked macaroni, just cook it according to package directions until its aldente, rince immediately in cold water, drain well. Place on trays in a single layer. It will stick together if stacked against each other, but does not affect flavor. Dehydrate. Remember when you think it's dry to let it sit for an hour or so on the trays, then check again for dryness to avoid case hardening (dry on the outside, still wet on the inside). Hope this helps. One other thing, when we started changing our diet, I came up with a 5-year plan to change one major thing each month. By doing this we've been much more successful and have not gotten so overwhelmed. We are a little over 2-1/2 years into this plan.

I'm not sure what a Betty Crocker Bowl Appetite is. What are you trying to thicken? I use barley or okra in soups. One thing I do for our teenage sons who are athletes is when we have extras freeze them in individual portions. I used to also do this for my husband's grandmother before she passed. I freeze pancake, waffles, french toast, baked eggs, etc. for breakfast. Any soups, casseroles, etc. freeze well too. Just keep track so they don't get buried in the back of the freezer. Is this what you are looking for. With the dehydrated items: bananas, apples, pears are great dehydrated. Hope this helps some. If you need more specific info let me know.
